Rhubarb Bars
Ingredients
3 Cups rhubarb
1 1/2 cups sugar
2 tablespoons cornstarch
1/4 cup water
1 teaspoon vanilla
Crust:
1 1/2 cups oatmeal
1 1/2 cups flour
1 cup brown sugar
1 tsp. baking soda
1 cup oleo or sortening
1/2 cup nuts (chopped)
1 1/2 cups sugar

Instructions
Cook rhubarb, sugar, cornstarch, water and vanilla together until thick.
You can add about 1 tablespoon of raspberry or strawberry jell-o to the mixture or leave plain.
Mix all the crust ingredients together
Line 9x13 pan with oatmeal mixture (save some for top) pour rhubarb mixture over, put the rest of the crumble on top
Bake at 375 for 35 to 40 minutes
