Hillbilly Bean Soup

Ingredients

11oz bag of dry bean mix
salt
1 Lb ham pieces
1 clove garlic chopped
1 large can tomatoes
1 large onion chopped
juice of 1 lemon
1 pod green or red pepper chopped

Instructions

Wash 1 1/2 cups of bean mixture
Cover with water and 1 Tbs salt and soak for 3 hours or overnight.
Drain the beans and put in 2 quarts of water.
Add the other ingredients
Cook all day, at least four hours.
May be kept in covered container in refrigerator up to four days.
has a flavor all its own!
Polish or German sausage, beef, chicken or other meat may be substituted for the ham.
