Apple Ginger Marmalade

10 half-pints

Ingredients

1/4 lb fresh ginger root, peeled and chopped
1 1/2 lb green apples
2 small lemons unpeeled and finely chopped
1 small orange unpeeled and finely chopped
1 1/4 cup water
3 1/2 cups sugar

Instructions

In pan, mix ginger, apple, lemon, orange and water. Boil. Simmer covered until tender, 40 minutes.
Add sugar, stir until dissolved. Boil uncovered until thick, 1 hour.
Cool completely, put into freezer containers 1/2 inch from the top, cover tightly and freeze.
