Lime Zucchini Marmalade
about 6 1/2 pints
Ingredients
4 cups coarsely shredded zucchini (about 1 pound)
2 cups water
1/2 cup lime juice about four limes
1 (1 3/4 oz) package powdered fruit pectin
5 cups sugar
3 Tbs grated lime peel
2 cups water

Instructions
Combine zucchini, water, and lime juice
Bring to a boil
Boil gently for 10 minutes
stir in pectin
Return to a boi
Stir in sugar and lime peel
Return to a hard rolling boil that cannot be stirred down
Boil stirring constantly for 2 minutes
Remove from heat
stir five minutes
Ladle into hot jelly glasses
Seal with melted parafin
Bring to a boil
Boil gently for 10 minutes

Stir in sugar and lime peel
