Deviled Stuffed Eggs
Ingredients
5 hard cooked eggs
4 Tbs mayo
1 tsp. dry mustard
small can smoked salmon
4 Tbs mayo
1 tsp. dry mustard
small can smoked salmon
Instructions
Cut the eggs in half lengthwise or slice off both ends which leaves a barrel shaped container. Remove yolks carefully so as to not damage the whites. Crush the yolkes without packing them and moisten them with the mayo. Add mustard and smoked salmon.
Put the filling back into the whites.
Use a star-shaped pastry tube for elaborate effects. To enhance flavor and texture, remove the ggs from the refrigerator for 30 minutes before serving.
Garnish with either sliced olives, pimentos, or tomato and sprinkle with paprika.
Note: Same filling may be used as a spread on shaped croutons or rice crackers.
