Carrot Cake
Ingredients
1 1/2 cup corn oil
2 cups sugar
3 eggs
2 cups flour
1 Tbs cinnamon
7 oz coconut (optional)
1 cup nuts (if desired)
1 can 8 oz crushed pineapple
2 tsp baking soda
2 tsp vanilla
1 tsp salt
2 cups shredded carrots
Frosting:
6 oz cream cheese
1 stick butter
1/2 tsp vanilla
1/2 bag powder sugar

Instructions
Mix together oil and sugar, add eggs
Beat well.
Add dry ingredients and mix well
fold in carrots (nuts), pineapple and coconut.
Bake at 350 for 45 minutes
cool and frost
