Eggplant and Sausage Sauce

Ingredients

Large eggplant peeled and cubed
1/2 to 1 lb sausage
1-2 cans tomato sauce in jars
4-6 garlic cloves
1 medium chopped onion
black pepper
red pepper to taste
1 lb pasta

Instructions

Saute onion in pot with a little oil
Add sausage and bronw
Add minced garlic
then eggplant
Saute 3-4 minutes, pepper
put in tomato sauce cook 1/2 hour to hour
Serve over pasta
